Soup: 3 pt. Potato Cheese Soup

10 oz potato, peeled and cubed
1 t. chicken bouillon
1 c. chopped broccoli
dash pepper
3/4 c. celery
1/2 c. carrot, chopped
1/4 c. onion, chopped
1 c. water
1/2 c. skim milk
2 T. flour
4 oz shredded low fat cheddar cheese
1 oz. lean hamRecipe
Put 1st 7 ingredients in water, bring to a boil, reduce heat, and simmer for 20 minutes. In a small bowl, whisk flour and milk together. Slowing pour into begetable mixture, stirring constantly. cook over medium heat until slightly thickened, about 5 minutes. Add cheese and ham, cook until cheese melts (3 minutes).
Makes 4 -- 1 1/4 c. servings. It comes out to 3 points. It is easy to double.
