    Soup: 7 pt. 15 Bean Soup

    12 oz low-fat sausage
    8 cup(s) fat-free chicken broth
    20 oz bag dry 15 Bean Soup Mix
    14 1/2 oz Del Monte Original Recipe Stewed Tomatoes
    14 1/2 oz Del Monte sliced carrots
    15 1/4 oz Del Monte golden whole kernel corn
    1/2 cup(s) Heinz tomato ketchup

    Clean & soak the beans overnight. Drain & rinse beans the next morning. In a large stock pot, combine drained beans & chicken broth. Bring to a boil. Separately, cook the sausage down to cook out most of the fat. Drain & rinse the cooked sausage to further eliminate excess fat. Add cooked sausage to beans & broth. Allow to simmer for 2 1/2 to 3 hours. Add veggies & simmer for another 30 minutes. Serves 8.


    Special Notes
    You can use the seasoning packet inside the soup mix bag if you'd like, but I prefer not to. The soup has plenty of great flavor without it. This soup makes a great leftover. Try adding any combination of vegetables, just don't forget to add the points.
