    0.25 pt. Oven Roasted Asparagus

    1 pound asparagus
    2 cloves garlic, slivered
    4 tablespoons water (you can use 2 tbs of white wine/2 water)
    2 teaspoons lemon juice
    1 teaspoon olive oil
    1/4 teaspoon salt
    1/8 teaspoon pepper or more

    Break off tough ends from the asparagus spears. With a vegetable peeler, peel bottom half of the asparagus stalks. Scatter the garlic in a 13X9 baking dish. Arrange the asparagus in a single layer. In a small bowl, combine water, lemon juice, oil, salt and pepper. Pour over asparagus. Bake at 400 degrees for 10 minutes. Turn the asparagus over and roast for an additional 8 to 10 minutes, til tender crisp and liquid is almost gone.

    Makes 4 servings - 1/4 point each.
