    1 Medium Zucchini
    1 medium yellow squash
    1 small red onion -- cut into wedges
    1 medium red bell pepper -- or green, cut into 1" pieces
    4 ounces mushrooms, whole -- divided
    1/2 cup fat-free Italian salad dressing -- divided
    8 wooden skewers

    Recipe



    Soak 8 wooden skewers in enough water to cover in a large bowl for 30 minutes. Preheat grill. Slice the zucchini and yellow squash lengthwise into halves. Cut the halves crosswise into 1/2 inch pieces. Thread the zucchini, yellow squash, red onion, bell pepper, and mushrooms alternately on the wooden skewers or metal skewers. Brush the vegetables with half the salad dressing. Grill over medium-hot coals for 10 minutes or until veggies are tender-crisp, turning occasionally. Remove the kabobs to a serving platter. Brush with remaining dressing.
