3 large sweet onions
1/4 cup balsamic vinegar
1 Tbsp olive oil
2 tsp fresh thyme, chopped
1 tsp fresh basil leaves,minced
1/4 tsp sea salt
1/4 tsp freshly ground black pepper

Preheat oven to 450 degrees. Peel onions, leaving roots in tact and cut each onion into 6 wedges. Place onion wedges in an 11"x17" baking dish coated with cooking spray. Combine vinegar and remaining ingredients in a small bowl. Pour vinegar mixture over onion wedges, tossing gently to coat. Cover and bake for 25 minutes. Uncover and bake an additional 45 minutes until tender.
Serves 6 (1 cup each)
