    List of Ingredients




    2 large potatoes, peeled and sliced
    1 red sweet pepper, sliced
    4 carrots, peeled and sliced
    1 head broccoli, cut into bite-sized pieces
    4 medium zucchini, sliced
    1/2 tsp. salt
    3 tbsp. olive oil
    Herbs, fresh or dry (rosemary, oregano, thyme)

    Recipe



    Preheat oven to 400¼ F (205¼ C). Lightly grease a large baking dish. Combine vegetables in prepared baking dish, and lightly salt. Brush with olive oil until well coated. Sprinkle with herbs as desired.Bake for 30 to 45 minutes or until vegetables are tender.

    Yield: 8 serving
