    List of Ingredients




    4 medium red potatoes -- unpeeled
    3 tablespoons warm water
    3 tablespoons parsley -- finely chopped OR parsley, chives and basil -- optional
    1 tablespoon olive oil
    1 tablespoon Dijon mustard
    1/2 teaspoon salt
    1/2 teaspoon sugar
    1/4 teaspoon ground black pepper

    Scrub potatoes and cut into 3/4- to 1-inch chunks. Bring 2 inches of salted water to a boil in a medium saucepan over high heat. Add potatoes; reduce heat and boil gently 10 to 15 minutes or until tender. Drain potatoes and return them to the saucepan. Meanwhile, in a small bowl mix water, parsley, oil, mustard, salt, sugar and pepper with a fork until well blended. Pour over warm potatoes and toss gently to coat. Serve immediately.
