    2 pt. Eggplant Parmesan

    1 eggplant
    1 red pepper
    1 red onion
    1/2 c spaghetti sauce
    cooking spray

    Recipe



    Cut peel off eggplant and slice thin. Slice pepper and onion. Broil all with cooking spray (I like the garlic kind). When they are soft, layer the eggplant, pepper, onion & 1/2 of the sauce and repeat. Sprinkle with dash of parm cheese if desired. Serves 1.
