    2 pt. Guilt-Free Mashed Potatoes

    List of Ingredients




    2 pounds boiling potatoes peeled and chopped
    1/2 cup plain low-fat yogurt
    1/2 cup part-skim ricotta cheese
    1/4 cup chopped chives
    salt and pepper

    Recipe



    Put potatoes in a large saucepan. Add cold water to cover and salt to taste. Bring to boil, reduce heat and simmer, covered, 15 minutes or until tender. Drain and return to saucepan. Add yogurt and ricotta cheese and mash with a hand held mixer or potato masher. Season with herbs and salt and pepper.

    Serves 6.
