    2 pt. Lemon Mashed Potatoes

    List of Ingredients




    5 cups potato peeled and cubed
    1/2 cup plain low-fat yogurt
    1 tablespoon fresh lemon juice
    2 teaspoons sugar
    1/2 teaspoon salt
    1/4 teaspoon pepper

    Recipe



    Place potato in a large saucepan; cover with water, and bring to a boil. Reduce heat; simmer 15 minutes or until tender. Drain potato, and return to pan. Add the yogurt and remaining ingredients; beat at medium speed of a mixer until smooth.

    Yield: 4 servings (serving size: 1 cup).
