1 1/2 pounds baking potatoes cut lengthwise, in thin strips
1 tablespoon extra virgin olive oil
1/4 teaspoon salt
1/4 teaspoon pepper Recipe
1. Preheat oven to 450¼F. 2. Combine all ingredients in a large zip-top plastic bag. Seal; shake to coat potatoes. Arrange potatoes in a single layer on a baking sheet. Bake at 450¼F for 30 minutes or until crisp and golden. Yield: 4 servings.
