1 1/4 pounds potatoes, peeled and chopped
5 garlic cloves, peeled
3 tablespoons nonfat sour cream
1 tablespoon olive oil

Place potatoes and garlic in a large saucepan; add water to cover. Bring to a boil; reduce heat and simmer until tender, 20-30 minutes. Drain, reserving 3/4 cup cooking liquid. Mash potatoes and garlic in saucepan; stir in remaining ingredients. Gradually stir in some of the cooking liquid until creamy. Serves 4.
