3 cups raw carrots, cut and uncooked
12 saltine crackers
2 TBSP minced onion
2 TBSP reduced calorie margarine, softened
4 oz reduced fat cheddar cheese, gratedRecipe
Boil carrots in water for 20 minutes, drain...save 2/3 cup of the liquid! Mash carrots, stir in crackers, onion, margarine, and the 2/3 cup of reserved liquid. Put in casserole dish that has been sprayed with Pam. Cover with the grated cheese. Bake at 450 for 15 minutes.
Serves 4.
