5 pt. Microwave Baked Potato

List of Ingredients
1 Large (10 oz) Idaho potato
1/4 cup low-fat (1%) Cottage Cheese
1/4 cup plain low-fat yogurt
1 green onion, chopped
1 tsp dill weed
1 small tomato, diced
a pinch of parsley Recipe
Poke holes in potato and put in microwave with paper towel laid lightly on top. Microwave on high for 8 minutes. When done wrap in foil and let set while combining remaining ingredients. Mix cottage cheese, yogurt, onion and dill weed until well blended. Unwrap potato and slice open on top, lengthwise then squeeze towards center from each end to break up potato inside and make soft. Top with cottage mixture and sprinkle diced tomatoes on top. Sprinkle a pinch of parsley on top of tomato for a nice presentation.
