10 ounce potato, split and fluffed ( baked )
1/4 cup frozen chopped spinach thawed and squeezed
1/4 cup ricotta cheese part skim milk
1 pinch garlic powder
1 pinch hot red pepper flakes optionalRecipe
In small bowl, combine potato flesh, spinach, ricotta, garlic powder and red pepper flakes, if using; stuff back into potato skin. Bake as directed in basic baked potatoes.
Serving (1 stuffed potato) provides: 1/2 veg, 1 pro, 2 bread.
