Barbecued Beef Satay

1 pound top round, trimmed of all visible fat
1 large onion, minced
1/4 cup defatted low sodium stock
1/4 cup lemon juice
1 tablespoon peeled grated gingerroot
2 teaspoons low sodium soy sauce (off plan ingred)
1 teaspoon caraway seeds
1 teaspoon ground corainder
1/2 teaspoon turmeric
1/2 teaspoon ground red pepper
3 cloves garlic, minced
3 to 4 cup hot cooked rice Recipe
Cut the beef into 1" cubes. In a large bowl, combine the beef, onions, stock, lemon juice, ginger, soy sauce, caraway, coriander, turmeric, red pepper and garlic. Cover and allow to marinate for 2 hours. Thread the meat onto small skewers. Reserve the marinade and transfer to a 1 quart saucepan. Broil the meat 4 inches from the heat for 6 mnutes, turning once and brushing with the marinade. Boil themarinade for 1 minute. Serve the meat atop the rice. Spoon on the marinade.
