Beef Meatballs

List of Ingredients
1/4 cup rolled oats (uncooked)
1 small onion, peeled and grated
dash pepper
1/4 teaspoon worcestershire sauce
1/2 teaspoon low sodium soy sauce (optional)
1 pound lean ground beef
cooking spray
5 or 6 sliced mushrooms (optional)
1 cup beef broth (low sodium)
1 teaspoon cornstarch
Recipe
Mix the rolled oats, onion, pepper, soy and worcestershire in a bowl; gently mix in the ground beef. Formt he mixture into meatballs (about the size of a walnut). Brown the meatballs on both sides in a nonstick skillet coated with cooking spray. Just before they finish browning, add the mushrooms if desired and saute until they mushrooms are lightly browned. Add the liquid, cover the pan tightly, and simmer gently for about 30 minutes. Mix the cornstarch with 1 tbl cold water, and stir in a ladelful of the broth from the meatballs. Add this mixture to the meatballs and simmer gently until it is cooked and thickened, about 2 minutes. Makes about 16 meatballs. (about 1 oz each)
