    Crockpot Swiss Steak

    List of Ingredients

    * 1-1/2 lbs round steak, trimmed of fat, cut in serving pieces
    * 1 lb bag baby carrots
    * 1-1/2 lbs new potatoes, scrubbed, cut into quarters
    * 1 med onion, sliced
    * 1 can low-sodium, fat-free beef broth
    * 1 can no salt added diced tomatoes
    * Italian seasoning
    * garlic powder
    * pepper

    Recipe

    Place potatoes, then carrots into sprayed crockpot. In pan over high heat, brown meat well on both sides. Place on top of carrots. Saute onions in any pan drippings for 1 minute, then add some of the beef broth to deglaze the pan. Pour this over the meat. In a bowl, mix the remaining broth and the tomatoes. Add seasonings as desired. Pour over all. Cover crockpot and cook on low for 9 hours or high for 6 hours.
