1/3 cup rolled oats
1/8 teaspoon pepper
1/4 teaspoon paprika
1 medium onion, peeled and chopped fine
2 1/2 pounds lean ground beef
1/4 cup ketchup (salt free)
Recipe
Mix the rolled oats, pepper and onion together in a bowl. Add the ground beef and mix lightly, handling the meat gently to avoid toughening it. Put the meat mixture into a 9x5 inch baking loaf pan. Can spread the ketchup over the loaf (or just stir it in for added moisture). Bake at 350¼F for about 2 hours. A meat thermometer stuck into the middle of the meatloaf should read about 150¼F when cooked thru. If you let the meat loaf rest in the pan for 10 minutes before serving, it will slice more easily.
