Peppered Beef

1/2 pound beef boneless sirloin steak -- about 1/2 inch thick
1/2 teaspoon coarsely ground pepper
2 tablespoons tomato paste
1 tablespoon red wine vinegar
1 teaspoon chopped fresh thyme leaves OR 1/2 teaspoon dried thyme leaves
1 medium bell pepper -- chopped (1 cup)
1 small onion -- chopped (1/4 cup)
Recipe
Cut beef into 2 pieces. Rub both sides of beef with coarsely ground pepper. Heat 10-inch nonstick skillet over medium-high heat. Cook beef in skillet 4 minutes on each side, turning once. Stir in remaining ingredients . Reduce heat to medium-low. Cook uncovered about 5 minutes, stirring occasionally, until beef is cooked to medium doneness (160?). Serve sauce over beef. Portion into serving size appropriate for your eating plan.
Probably good over rice or steamed potatoes
