    Beef Stuffed Baked Potatoes

    8 ounces extra lean ground beef
    4 large potatoes
    1 onion, minced
    1 sweet red pepper, minced
    1/4 cup minced fresh parsley
    1 teaspoon dijon mustard
    1/4 teaspoon dried basil
    1/4 teaspoon dried thyme
    1/8 teaspoon red pepper

    Recipe



    Bake the potatoes at 375ºF for 1 hour, or until easily pierced with a fork.
    In a large nonstick frying pan over high heat, brown the beef for 5 minutes. Add the onions, peppers, parsley, mustard, basil, thyem and red pepper. Cook for 3 minutes. Reserve 1/2 cup. Cut a thin slice off the top of each potato. With a spon, scoop out the insides, leaving a 1/4" thick shell. Mash the scooped out potatoes and add to the beef mixture int he pan. Spoon the mixture into the shells, mounding it. Sporinkle with the reserved mixture. Reheat in the oven for 5 minutes.

    Buny's note: if you cut potatoes in half, each half should be approx. 1/2 cup carb and about 1-2 oz. beef per serving (the beef cooks down in weight after cooking)
