Beef & Barley Bake

Nonstick spray coating
3/4 Pound round steak beef cut into 1/2-inch cubes
1 Clove garlic minced
1 3/4 Cups beef broth
1 Cup carrots shredded
1 Can waterchestnuts (8 ounce) drained- sliced
1 Teaspoon dried basil crushed
1/3 Cup pearl barley
2 Medium zucchini halved lengthwise- and thinly sliced (2 cups)
1/4 Cup parsley snippedRecipe
1. Spray a large skillet with nonstick spray coating. Preheat skillet over medium heat. Add meat and garlic. Brown meat on all sides. Stir in beef broth, carrots, water chestnuts, and basil. Bring to boiling. Stir in barley; return to boiling. Pour mixture into a 1-1/2-quart casserole.
2. Bake, covered, in a 350 degree oven about 50 minutes or till beef and barley are nearly tender, stirring occasionally. Stir in zucchini and parsley. Bake 15 to 20 minutes more, or till tender.
