    Jumbo Spiced Meatballs

    1/2 medium onion -- finely chopped
    2 eggs
    1/4 cup water
    1/2 cup rolled oats
    1 tablespoon prepared spicy mustard
    1/2 teaspoon ground nutmeg
    1/4 teaspoon pepper
    2 1/2 pounds lean ground beef

    Recipe



    In a mixing bowl, combine the onion, eggs, water, oats, mustard, nutmeg, and pepper. Add the ground beef and mix well. Shape the meat mixture into 16 large meatballs (about 1/3 cup each). Place shaped meatballs in a shallow baking pan. Bake, uncovered, in a 350¯ oven for 25 minutes or till no pink remains. Serve the meatballs warm

    Can make a gravy by combining 2 c. beef broth with 2 tsp prepared mustard, 1 1/2 tsp ground nutmeg, 1/2 tsp low sodium Worcestershrie sauce and 1/4 tsp ppper. (original recipe also called for using the meatball drippings). Stir in 2 tbl. cornstarch and cook and stir until thickened and bubbly. Cook and stir for 2 min. more.
