    Luscious Lasagna and Sauce

    "I am sure there are other Lasagna recipes out there, but I've never seen one and never really looked. I just know that this lasagna ROCKED so I wanted to share it with everyone. I bought a box of rice lasagna noodles from one of my online websites (I can post it for you if you'd like) to experiment with them and see how they taste. So here is what I ended up with:"

    List of Ingredients




    ~ 1 box rice lasagna noodles
    ~ 6 cups+ of on plan spaghetti sauce (have a separate recipe for this but mainly consists of roma tomatoes, sodium-free tomato paste, fresh garlic and spices)
    ~ 1 lb. lean ground beef
    ~ 1 cup freshly chopped green onions
    ~ 1 cup freshly chopped white and red onions
    (Optional ingredient might be spinach)

    Preheat oven to 375. The noodles are bake only noodles so place one layer of lasagna noodles in the bottom of the dish then place a layer of tomato sauce, ground beef, green onions and white/red onions. Repeat layering three times and end with a thin top layer of tomato sauce, ground beef and onions. This may not be quite as delicious as a layer of cheese, but with a thinner layer, it creates almost a crust on the top of the casserole. Bake for 1 hour then allow to cool slightly before eating.

    This is my ABSOLUTE NEW FAVORITE dish!! It is so so so so good to me!! I must say though the key is in the spaghetti sauce so it might be good to just review how I make that again.

    SPAGHETTI SAUCE

    I boil approximately 10 - 15 roma tomatoes then pop the tomatoes out of their peels and crush them. I add two cans of sodium-free tomato paste and 1 can sodium free tomato sauce (Del Monte sells both... just make sure the only ingredients are tomatoes). I use my food processor to chop about a cup or more of fresh garlic (I like garlic) and put that in the mixture.

    I add about a 1/2 cup each of white onions, red onions and yellow onions (I like onions too hehe) then bring the mixture to a boil. I let it boil for about 10 minutes then reduce the heat to allow the sauce to simmer while adding spices such as Ms. Dash Garlic and Herb, Italian Seasoning, Garlic Powder, Onion Powder and one packet of Chicken Herb Ox. Finally, I sweeten it a bit with Brown Sugar Twin. I let it simmer for about an hour before I put it in tupperware and stick in the fridge.

    " I usually keep my sauce handy because it is a good way to get the veggie requirement taken care of. I use it on my rice pasta with turkey burger... add tomato paste to a small portion to make a pizza sauce for on-plan pizza, use it on a potato at dinner time, use it to top my meatloaf for baking or now on the lasagna recipe."
