"Tortilla"--1/2 cup oatmeal flour, garlic powder, low sodium baking powder, water--bake at 400F at least 10 minutes
"Sauce"--1 can low sodium tomato sauce, garlic powder, cilantro flakes, dash of vinegar, oregano
"Beef Topping"--2 oz browned ground beef (or turkey) [I brown my meat in a "Church pan" (named that because it has holes in the bottom like a strainer) over boiling water. This allows all the fat to drain off.] Season meat with cumin, cilantro, etc (your favorite mexican seasonings).
"Veggie Toppings"--shredded lettuce and homemade salsa (Roma tomatos, onions, green peppers, garlic)
This was SOOOO good. Experiment with it and try out your own. I use this "tortilla" for pizza crust and top it with everything from BBQ Chicken to Chili.
