    2 pounds lean eye of round
    2 medium potatoes, peeled and quartered
    2 large carrots, peeled and cut in 1" pieces
    2 medium onions, cut into eighths
    1/2 cup red wine
    1 teaspoon black pepper, fresh ground

    Note: Can substitute skinless chicken or turkey breasts and roast in this same way.

    Place beef in dutch oven or deep baking dish. Place potatoes, carrots and onions evenly around beef. Pour wine evenly over beef and veggies. Sprinkle on black pepper. Cover and bake at 300 degrees for 1 1/2 hours.

    Variations:

    Hearty Vegetable Roast: Replace potatoes with turnips, parsnipis and yams for a rich earthy taste with your roast.

    Chicken pot pie: Substitute skinless chicken breasts for beef; use new potatoes and pearl onions.

    Turkey Pot Pie: Substitute skinless turkey breasts for beef and brussel sprouts for potatoes.
