Zucchini & Beef Delight

List of Ingredients
1/2 cup no salt added chicken broth
1 medium onion, diced
1 green pepper, sliced
4 cloves garlic, minced
4 small zucchini, cut in 1/4" slices
1 pound lean ground beef
1 teaspoon ground cumin
1/2 teaspoon cinnamon
1 teaspoon cayenne
1 teaspoon ground tuurmeric
14 ounces no salt added diced tomatoes
2 tablespoons tomato paste
handful of chopped fresh cilantro Recipe
In a large nonstock skillet over medium heat, heat broth. Add onioin, green pepper, garlic and zucchini and saute until soft. Tansfer vegetables onto plate and set aside. In the same nonstick skillet, brown beef, cumin, cinnamon, cayenne and turmeric until beef is cooked through. Add cooked vegetables, diced tomatoes and tomato paste to skillet. Heat through and add cilantro before serving. May use ground turkey instead of ground beef if desired.
