From member puddy: This one tasted just like having banana bread!
List of Ingredients
4 egg whites
1/4 tsp vanilla
1/4 cup Splenda or to taste
3 tbsp oat flour
1 small zucchini shredded
1/4 tsp cinnamon
Recipe
Beat eggs until stiff peaks form. Mix in vanilla, Splenda, and cinnamon. Add flour a tablespoon at a time, mixing after each addition. Mix in small amounts of zucchini at a time until all has been added. Drop into 2 dollops onto parchment paper and bake in 350 degree oven until just beyond golden brown. Turn off oven and leave in for 30 minutes. Best made same day will be eaten

For oat flour: Put raw oatmeal in a blender and you have oat flour. I actually have used my flax seed grinder and it makes a nice flour with the oats.
