1/3 cup green pepper -- chopped
1/3 cup onion -- chopped
1 teaspoon fresh garlic
2 cups potatoes -- cooked sliced
1 tablespoon italian seasoning
pepper -- to taste
2 cups Egg Beaters¨ 99% egg substitute


Recipe

SautZ vegetables, garlic Add potatoes, Italian seasoning, pepper. Add Eggbeaters,
reduce to low heat and cook 10-12 minutes, without stirring. Broil 2-3 minutes until cooked through. Can do the broiling in a 9x9x2 casserole dish if needed.
