List of Ingredients
1/2 c. ground oats
1/4 c. cool water
1/4 c. canned pumpkin
2 tsp. pumpkin pie spice
1/2 tsp. vanilla
8 egg whites (I used medium eggs... might make a difference)
3 tablespoons splenda
Recipe
Put 2 egg whites in a small bowl, Add oats, water, pumpkin, spice, and vanilla to the 2 egg whites and mix thoroughly with a fork. Then set aside.
Put the remaining 6 egg whites into a large metal, VERY CLEAN bowl (very clean because we're practically gonna make meringue here with them, and any residues can make you fail). start whipping the 6 egg whites in the large bowl with an electric beater. Whip until soft peak stage. Add splenda, and then whip into a stage between soft peak and hard peak. (soft peak means if you stop the mixer and lift it out the egg whites will create a peak which will bend over. Hard peak means if you do the same, the egg whites will create a peak that stands up straight)
Empty small bowl into the beaten egg whites. Using electric mixer, beat into the egg whites... ONLY as long as it takes to mix it in thoroughly. If you mix longer, you will make the egg whites lose volume.
Pour into non-stick bread pan. Bake at 350 degrees for 25 minutes or until knife inserted into middle comes out clean. let cool then slice into 4 equal pieces. Each piece is one protein (egg whites) and one carb (oatmeal)
