Rice Pudding with Pineapple

From member jayare: I have eaten this for breakfast before working out and as a pre-work out snack.
List of Ingredients
1 cup cooked rice
2 egg whites
1 pkt Splenda (1 to 2)
1/4 tsp cinnamon
1/4 tsp nutmeg
1 tsp vanilla
1 cup pineapple chunks
Recipe
Beat egg whites. Add spices, Splenda and vanilla. Stir in rice and pineapple. Put into an ovenproof casserole dish and bake at 350 for about 20 minutes.

This recipe would make one serving as a pre-workout meal. It has all the protein, carb and fruit that you would require. It should give you plenty of energy for a workout. I'm sure you may use either canned pineapple in it's own juice or fresh, either would work fine.
