    Skillet Scramble

    List of Ingredients

    browned and crumbled turkey sausage (prepared from kit cards)
    peeled and shredded potato
    diced onion to taste
    1/8 cup water

    Recipe

    Measure out your allotted amount of sausage and potato. Put into a small, non-stick skillet that has a lid. Add onion and water. Cook, covered until potatoes are cooked through. Remove lid and continue cooking until potatoes are browned.

    Notes: Brown sausage, crumbling it while cooking. Spread out onto waxed paper and freeze until firm. Remove from paper and store in a ziploc bag. Measure portions as needed. I use the frozen sausage crumbles as my protein allotment. It can be tossed into rice, sprinkled on a potato or salad and is easy to scoop out as needed!
