Sweet Potato Pancakes

1/2 cup oatmeal (uncooked)
1 egg white
1/4 cup leftover baked sweet potato
cinnamon to taste
nutmeg to taste
vanilla extract to taste
fresh or canned pineapple (no sugar added)
Recipe
Grind oatmeal into flour using a food processor or blender. Mix all ingredients except pineapple, adding water to make the consistency of pancake batter. Fry in a non-stick skillet on each side as you would a pancake. Puree canned pineapple, warm briefly in microwave and serve over top of pancake.
