    List of Ingredients




    1 banana (mashed)
    2 egg whites
    1/4 tsp vanilla
    1 Tbsp Pumpkin Spice (or Allpice, Ginger, Cinnamon, and Nutmeg)
    2 Tbsp Splenda (or to Taste)

    Recipe



    Mash banana flat ( I use a fork), sprinkle pumkin spice and Splenda, add egg whites and vanilla. Whisk until eggs foam slightly (just enough to get some air bubbles). Poor batter into non-stick pan. Brown on each side (only takes about 20-30 seconds on high or each side). Recipe makes two regular sized pancakes or one large 9" pancake. If you would like, top with sugar free syrup (Splenda makes a great one).

    Note: I'm pretty sure you could substitute the banana for pumkin for a nice fall treat.

    Counts as 1/2 C. Fruit 2 oz. Protein
