    List of Ingredients




    8 ounces fresh mushrooms, sliced
    1 cup chopped zucchini
    1/2 cup chopped green pepper
    1/4 cup sliced green onions
    2 Tablespoons Chicken Broth
    1 medium tomato, diced and seeded
    8 eggs whites
    2-1/2 Tablespoons water
    2 Tablespoons Dijon mustard
    1/2 teaspoon garlic powder
    1/4 teaspoon pepper
    paprika

    Recipe



    In a large non-stick skillet, sauté mushrooms, zucchini, green pepper, and onions in Chicken Broth for 5 minutes or until tender. Drain off juices. Stir in tomato. In a bowl, beat the egg whites, water, mustard, Garlic and pepper. Pour over vegetables. Cover and cook over medium heat for 5 to 10 minutes or until eggs are set. Sprinkle with paprika. Cut into wedges to serve.
    This makes 4 servings. And it’s good eating cold also.
    Good for all body types
