Maple Pancakes

2 egg whites
1/4 cup oat flour
( I grind my own from oatmeal in the food processor but you can find oat flour at a health food store.)
3-4 TBS water
1/4 tsp. maple flavoring (get it where you find vanilla extract)
3 packets Splenda
1/4 tsp baking powder (optional...I don't use it)Recipe
Take a wire whisk and beat it well. I let it sit for 5 minutes or so before cooking to thicken. I cook mine in an electric skillet....you don't need to use PAM. Makes 2-3 medium sized pancakes. Now you have your carb and protein portions without having to eat any boiled eggs!! I've been eating these for snacks for 4 weeks now and I'm not sick of them yet. Donna (didi 20) also posted a very good recipe for preworkout pancakes. If you look back 7 or 8 days you'll be able to find it. It uses applesauce, oat flour and sweet potatoes. It's really good!
