Oatmeal Blueberry Pancakes

2 egg whites, beaten to soft peaks.
1/2 cup UNcooked oats
3/4 tsp cinnamon
1/2 -1 tsp Somersweet (this is very sweet, so if you use Splenda, you'll have to experiment with the sweetener)
1/2 tsp vanilla
1/2 tsp butter flavoring (optional)
1 cup blueberriesRecipe
Reserve 30 blueberries (10 for each pancake) and put the rest of the blueberries in a pot with 1/4 cup water and about 2 tsp balsamic vinegar and a little sweetener if you want. Bring to GENTLE boil and reduce to simmer and cook until blueberries are soft and the mixture is a bit syrupy.
Combine all dry ingredients (oats, cinnamon, sweetener) and add flavorings to egg whites. Combine all ingredients and mix well. Allow to stand about 3-5 minutes (if you let it sit too long, the oats with absorb all the egg and the mixture will get too dry).
Spoon "batter" into about 3 pancakes into a med hot non-stick skillet. Put 10 blueberries on each pancake and turn when they are browned slightly on the bottom.
Serve with the warm syrup.....YUMMMMY.
This recipe is 1 cup carb, 1 cup fruit, and 2 egg whites. It is a great pre-workout meal. And, if you're a B, it's the only time you can have it......so, get out there and work out!!!!!
to this recipe...I have done it with strawberries, and peaches , both are really good...with the strawberries, I don't put them in until the last couple of minutes...so that they get warm, but not mussy....with the peaches, I added cinnamon to the syrup also, but did everything else the same...
I made up several batches and froze the syrup and pancakes, they are good, and freeze fine....I also started leaving the fruit out of the pancakes...and just putting in in the syrup, for myself, it was easier....
oops almost for got...I use splenda, and put 6-8 packets in the pancakes, and 1-2 in the syrup...hope that helps...
