Turkey Sausage w/ Home Style Potatoes

POTATOES
1 med Onion chopped
2 tsp Soy sauce, low salt
2 Potatoes diced
SAUSAGE
1 pound Ground turkey
1 Egg white
1/3 cup Fresh whole-grain breadcrumbs (or use partially ground oats)
1/2 tsp Dried sage
1/2 tsp Ground coriander
1/4 tsp Fennel seeds
1/4 tsp Paprika
1/4 tsp Black pepper, freshly ground
1/8 tsp Dried marjoram
1/8 tsp Dried thyme
1/8 tsp Summer savory
1 pch Grated nutmeg
1 pch Ground red pepperRecipe
* To make the potatoes: In a 6-cup glass measure, combine the onions and soy sauce. Microwave on High for 3 minutes. Add the potatoes and toss to combine. Cover with wax paper and microwave on High for 4 minutes. Stir, cover again, and microwave on High for 4 minutes. Let stand, covered, until ready to serve.
* To make the sausage: In a medium bowl, combine the turkey, egg white, breadcrumbs (or oats), sage, coriander, fennel, paprika, black pepper, marjoram, thyme, savory, nutmeg, and red pepper. Mix well. Form into patties.
* Place the patties on a baking sheet and broil about 4 inches from the heat for about 4 minutes, or until lightly browned on top. Flip and broil several more minutes to brown. Serve hot with the potatoes.
* Comments: The meat 'n' potatoes lovers in your household will go for this lowfat version of sausage and home-fries. If you have any leftover sausage, refrigerate or freeze it, then reheat it in the microwave when needed. Thawed patties should take about 1 minute.
