Buck's Chili

2-3 cans LS tomatos, chopped,whole or stewed
2 cans LS tomato sauce
3 bell peppers, chopped, 1red, 1green, 1yellow
1 large onion, diced
3 jalapenos, chopped and seeded
3T. minced garlic
1 celery stalk finely chopped
optional: 1-2 chopped Habanero pepper
Put all into large pot. Add 2-3 tomato cans full of water, bring to boil, cover and simmer.
Add to above: (the following can be increased or decreased to taste)
2t. fresh ground black pepper
3T. chili powder
3-4T. cumin
1-2T. paprika
2t. oregano
2t. cayenne pepper
While the above is simmering, brown your ground chicken or turkey. Season with chopped onions, fresh ground black pepper, and any other NS seasoning you prefer.
Serve:
You can either add the meat to your chili sauce, or put your meat serving into a bowl and pour as much chili sauce as you would like onto your meat. This is also good poured over rice or potatoes.
I dont add beans to my chili, so that option is totally up to you.
Note: I dont measure when I'm cooking, I cook to taste. So you may need to add/subtract the seasoning to your particular taste.
Be sure and have plenty of water or unsweetened tea to drink. The habanero will definately make your head sweat.
