    Chicken: Carolyn's Awesome Chicken Chili

    this one has some off plan ingredients. simple substitutions can make plan friendly

    List of Ingredients

    4 large or 6 medium tomatoes, diced or 1 14 oz. can of diced tomatoes (no salt added)
    1 green pepper, seeded and diced
    1 red pepper, seeded and diced
    1 yellow pepper, seeded and diced
    1 orange pepper, seeded and diced
    1 cubanelle pepper, seeded and diced
    1 hot banana pepper, seeded and diced
    1 chili pepper, seeded and finely diced (use gloves when handling)
    1 tbsp., or to taste, chili powder
    1 tbsp., or to taste, hot chili flakes
    (original recipe calls for 1 tsp. salt )
    1 tsp. ground black pepper
    1 19 oz. can black beans, drained and rinsed (use pintos to make plan friendly)
    1 19 oz. can kidney beans, drained and rinsed (use pintos to make plan friendly)
    1 tbsp. olive oil (or use cooking spray or chicken broth)
    1 large Spanish onion, diced
    3 lbs. ground chicken

    Recipe

    In an 8 qt. pot, add first 15 ingredients and blend thoroughly. Place on low heat and start simmering.

    In a separate fry pan, heat olive oil (or use nonstick cooking spray or chicken broth for this step), add chopped onion, saute until soft and translucent. Transfer onion to first pot. In same fry pan, saute chicken until no longer pink. Drain chicken and add to first pot. Stir mixture throughly, lower heat to simmer and cook for 4 hours, until desired consistency is achieved. Serves 6.
