Chicken: Mexican Chicken Barley Chili

1 c. chopped onion
1 clove garlic minced
1 T veg. oil ( this is for browing..use PAM)
3 c water
1/2 c medium barley uncooked
1 can tomatoes (16 oz) undrained, chopped
1 can no-salt tomato sauce (16 oz)
1 can reduced sodium Chicken Broth (bout 1 3/4c)
1 can chopped green chilies (4 oz.) drained (i used fresh)
1 T chili powder
1/2 tsp. ground cumin
3 c chopped cooked chicken ( about 1 1/2lbs) Recipe
In 4qt. saucepan or Dutch oven, cook onion & garlic in oil (PAM) until onion is tender. Add remaining ingredients except chicken. Bring to a boil. Reduce heat to low; cover. Simmer 40 min., stirring occasionally. Add cooked chicken; continue simmering 5 to 10 min or until chicken is heated through & barley is tender. Add addtional water or chicken broth if hili becomes to thick upon standing.
Makes 9--1c servings
Now I added the cooked chicken while it was simmering 40min..& I added 1 can of pinto beans. Since the 5-Alarm chili allows us to do so...why not here. The choice is yours.
