Turkey: Kim's Chili

In a Dutch oven cook
1 Lb ground turkey breast, brown(over medium heat) in NAS, no fat chicken both (i just cover the bottom of the the pan, and add a little more as needed)
Throw in about a cup chopped onion (I like Texas 1015's the best)
Then chop up three peppers...all different colors I like to use 1 green, 1 red and 1 either yellow or orange.
Mix it up really good, then add 1 lg can NAS diced tomatoes and 1 -8oz can NAS tomatoe sauce and 1- 4 oz can diced green chiles ((Ortega is lower in sodium than El paso)
Then I add more veggies:
8 oz fresh mushrooms -chopped
4-5 small zucchini (I have one of those mandolines...I use the smallest julianne setting...but chopped small would work too)
Then I add about a cup of wine...red preferabily...since I'm not drinking it....I add to most recipes
Then I add all my spices....I eyeball so measurements are approximate
4-6 teaspoons Chili powder
3-4 teaspoons Ancho Chile powder
3 teaspoons garlic powder
1 teaspoon cumin seeds crushed in hand
1/2 teaspoon fennel seeds crushed in hand
1/2 teaspoon anise seeds crushed in hand
about 1/2 cinnamon powder
Simmer 30-45 minutes....I serve over brown rice or baked potato
