Source of Recipe
adapted from www.honeysucklewhite.com
List of Ingredients
2 pounds Honeysuckle White Ground Turkey
1 small onion, chopped fine
1 can tomato paste, no salt added
2 cans diced tomatoes with green chiles, drained (or substitute canned no salt tomatoes and canned or fresh green chiles to taste)
1 cup beer
1 1/2 tsp. garlic powder
1 1/2 tsp. ground cumin
(original recipe called for 1 Tbsp. salt)
2 tsp. Cayenne pepper
2 tsp. concentrated chicken base (may wish to substitute low sodium chicken bouillion mix)
5 cans pinto beans, drain only 3 of them
2 Tbsp. jalapeno peppers, finely chopped
jalapeno vinegar optional to taste
9 Tbsp. chili powder
Recipe
In a large heavy skillet, brown meat and onions. Add garlic, cumin, (salt,) and chili powder. Mix thoroughly. In a separate larger pot, mix tomato paste and tomatoes with green chiles. Add beer and chicken base and mix thoroughly. Mix meat mixture into the tomato mixture and dump into a large crock pot. Add pinto beans, jalapenos, and jalapeno vinegar to taste. Mix all ingredients thoroughly. Allow to simmer in crock overnight, stirring occasionally. If chili is thicker than you like, add a small amount of water at a time until it is the consistency you like.
