    Turkey: White Chili

    List of Ingredients

    * 2 cups cooked ground turkey breast
    * 1/2 cup pearl barley
    * 3-1/2 cups pinto beans (I soak & cook dried)
    * 1 jalapeno pepper, chopped
    * 3 cups chicken broth or turkey broth (no salt)
    * 1 tsp dried Mexican or regular oregano, crumbled
    * scallions, chopped
    * salsa, your favorite

    Recipe

    In a large dutch oven or pot, cook the onion and garlic in oil over moderately low heat, stirring, until onion is soft, about 5 minutes. Add the cooked turkey, barley, beans, jalapeno, broth, and oregano; simmer, covered, stirring occasionally, for 60 minutes. Season with pepper.

    To serve: Ladle into heated serving bowls, sprinkle with scallions and dollop of salsa.
