7 cups Chopped peeled plum tomatoes (about 4 lb/2 kg)
1/2 C Chopped Onion
1/2 C Chopped Sweet Red Pepper
2/3 C Cider Vinegar
2 tbsp Splenda
1 cinnamon stick
1/2 tsp whole allspice whole clove
1 bay leaf
Recipe
1. Combine tomatoes, onion and red pepper in a blender and process until smooth. A to a large pot. Bring to a boil over high heat and boil gently, uncovered for 30 min.
2. Add vinegar and sweetner. Combine all spices in a cheese cloth (I use a tea ball, it's cheeper b/c its reusable) and add to the sauce pot. Return to a boil and boil gently, uncovered, stirring frequently, until volume is reduce by half, about 1-1/2 hours. Remove cheese cloth )or tea ball).
Makes about 3 cups.
Divide the recipe in half if you choose.
