1 pineapple, peeled, cored and diced
1/4 cup minced fresh coriander
1/4 cup minced fresh mint
1 green chili pepper, seeded, finely chopped
2 tablespoons lime juice
1 tablespoon peeled grated gingerroot
Recipe
In a large bowl, mix the pineapple, coriander, mint, peppers, lime juice and ginger. Cover and let stand for 30 minutes.
