Salsa: Honeydew Salsa

2 cups honeydew melon, small dice
2 stalks celery, small dice
1 shallot, minced
2 tbsp cilantro, chopped
1 jalapeno, minced (seeds removed)
3 tsp olive oil (I omitted this when I made it)
juice of 2 limes, zest of 1 lime
pepper to taste
Recipe
Combine ingredients in a bowl, taste for sweet/sour and adjust accordingly since sweetness and flavor of fruit varies. Allow to rest in fridge at least 15 minutes for flavors to blend.
