List of Ingredients
20 Plum tomatoes
1 bunch of scallions
1 lg Green Pepper
1 lg Red pepper
1 Chipotle pepper (add more or less for hotness)
1 tsp minced garlic
1 tsp Lime Juice
Pepper to Taste
Mrs. Dash Onion blend to taste
Recipe
Chop tomatoes, scallions, green & red peppers. In a large Ziploc bag add all ingredients. Put in fridge for at least 2 hours. Drain off excess fluid. This will keep for about 6 weeks in the fridge
This is great on a bed of lettuce, tossed salad, egg whites, etc.
I use this in place of dressing on salad and sometimes I add boiled chicken or low sodium canned tuna, to have as my midmorning or afternoon snack.
