    Salsa: Peach Salsa

    List of Ingredients

    3 c (about 3 large peaches) peeled, pitted and chopped fresh peaches
    1/4 c sweet pepper chopped
    1/2 c Vidalia onion chopped
    1/4 c green onion chopped
    1 jalapeno pepper chopped
    2 tbls Splenda (calls for 2 tbls honey)
    2 tbls lime juice
    1 tbls cilantro

    Recipe

    Combine ingredients, put in food processor or blender. Chop for a few until to consistancy. Pour into saucepan and bring to a boil, stirring consistently to prevent scorching. Pour into hot clean jars, leaving 1/2 inch headspace. Adjust lids and hot water bath as follows:
    1/2 pints - 15 min bath 3-6000 ft 20 min bath over 6000 ft Recipe makes 4 1/2 pints You could also freeze this in freezer containers as long as you added Sure Fresh in to keep the peaches from going bad.
