    List of Ingredients

    2 cups finely chopped fresh tomatoes
    1/4 cup minced scallions
    2 fresh jalepeno peppers, minced
    1 clove garlic, minced
    1 tablespoon ground coriander
    1 teaspoon dried oregano leaves
    3 tablespoons lime juice
    1/2 cup low sodium tomato juice

    Recipe

    Combine the tomatoes, scallions, jalapenos, garlic, coriander, oregano, lime juice and tomato juice in a serving bowl. Refrigerate if not serving immediately. For variation, substitute white distilled vinegar for lime juice, and green bell peppers for jalapenos.
